Quick and easy vegetarian, plant based & Indian recipes

Hello. This is Tomato Blues, my blog where I share quick, easy and fresh Indian recipes. Help yourself to a medley of semi-homemade meals, budget-friendly cooking, naturally vegan food and expat-friendly Indian cooking. 

Here, you will find wholesome recipes made in the Instant Pot and easy recipes that you can whip up in the air fryer. There is almost always a substitute for most spices I use.

For folks who are exploring Indian food and unsure about the spice level, use 1/4 of the spices or ground spices mentioned here for the first time. For example, if a recipe calls for 1 tsp red chili powder, I recommend adding 1/4 tsp.

Air Fryer 

The air fryer is the latest fad and rightly so. You can make almost everything you can using the oven, in the air fryer and for this reason, it is such a versatile gadget. I even reheat my food in this and have done away with the microwave. How about you?
